Featured Winery: Adobe Hill

Adobe Hill Winery started with a simple intention: to slow down, spend more time together, and build something meaningful as a family. In 2016, Gordon and Vickie followed that instinct to Fallbrook, where they discovered a small adobe home perched on a hill along with an abandoned avocado grove that would soon become their vineyard. What they found wasn’t just land, but a place full of history, heart, and possibility.

With the help of friends, family, and neighbors, they cleared the land, planted their first vines, and began shaping their vision, eventually transforming the former avocado grove into a vineyard of Italian grape varieties chosen to thrive in Southern California’s climate.

At its core, Adobe Hill is truly a family-run winery. Gordon brings a long-term, business-focused perspective, while Vickie’s background in healthcare shapes the winery’s emphasis on connection and togetherness. Their son Jason leads as winemaker, applying his environmental science training to both the vineyard and cellar, and his partner Camry brings a thoughtful, human-centered approach — helping create a space that feels inclusive, welcoming, and grounded in community.

That spirit of connection was present from the very beginning. Before their tasting room was complete, they poured wines from a converted horse trailer, hosting tastings right on the land and building their community one visit at a time — a detail that feels especially close to home for us at Cork & Stem.

When Adobe Hill officially opened its tasting room in November 2024, it was already more than a winery — it was a gathering place. Today, it comes alive with live music, weekend food vendors, seasonal events, and intimate experiences in the vines, all rooted in a shared belief that wine should feel approachable and enjoyed together.

Looking ahead, the family remains committed to thoughtful land stewardship, with plans to pursue organic, regenerative, and SIP-certified practices — ensuring Adobe Hill continues to thrive for generations to come.

Adobe Hill Winery is, above all, a reflection of the people behind it — a family working side by side to create something intentional, welcoming, and grounded. It’s the kind of place where you can settle in, take in the view, and enjoy a glass of wine without overthinking it — exactly as they intended from the very beginning.
